I know two very willing recommenders (one has offered to write the recommendation without me even asking) but neither are Professors.  One is a County Judge who I've known my entire life, the other is a very well known and successful lawyer who specializes in the area I'm interested in specializing in.  I'm certain that both would write stellar recommendations.  Also, both are alumni of UF, my #1 choice.

So, if I have 2 Professor recommendations, would it benefit me to have these two write me recommendations, too?  Is it of any use or do they ONLY want Professor recs?
To put it bluntly, I seem to have a whole superstructure with no foundation. But I`m working on the foundation.

As long as you already have 2 academic recs, it should be fine.  Anything positive the other 2 recs say about you is a plus.
