No, there's nothing inherently offensive about calling someone something they are not. That's not what's offensive about her comment.
Who are you calling young? Or a college student for that matter? People who call Bush a Nazi terrorist murderer are overblowing things for sure, but it's completely different because it's a comment on the value of one individual - the status of Nazis, terrorists and murderers are settled matters. What's offensive about Coulter calling Edwards gay is the implication that both Edwards and homosexuals are bad or of less value. They are completely different matters.
