...Each LSAT test is used to compare candidates from the last five years. So is it viable to only focus on tests from the last five years for testprep?

I wouldn't focus exclusively on prep tests from the last five years because, for most people, they don't provide a sufficient quantity of prep material.

Having said that, it is essential to include the most recent tests in your preparation.  The most compelling reason I can think of is that the distribution of questions and difficulty of the games and reading comprehension sections have changed.  For this reason, practice scores from older preptests aren't as accurate.
