Would it be a good idea to mention within the personal statement, somehow, that you have a strong interest in teaching?

I dont see how that would help you.. Maybe it won't hurt but I definitly can't see how it would help..

That is in itself the hardest part.  Trying to convey the message that they want you to convey to them, while seeming genuine..

Personally, I decided against doing a "normal" essay, and wrote about my major which was sports management.  Sports come easy to me, and I was even able to include law school in it, but the focus was on sports. 

The most important thing is to deliver a concise and well-written statement that gives off a genuine vibe.  Definitly don't write anything that isn't true, as that will come off to the reader.

Or you could even come up with a specific experience dealing with one of your majors (or even something else) and focus on how that experience is illustrative of your passion for law and government.
