Jews are not considered minority candidates by any law schools as far as I know.

Jewish lawyers are a majority rather than minority in law and have been for many years.  URM means native american, black, latino, pacific islander.  Basically you have to be black, hispanic or come from a tribal New World culture.

I have always wondered though about percentages. E.g., if I am 1/16 Cherokee, would I be a URM?

Not to come off as an a-hole, but if your only link to judaism is from your father's side, you aren't jewish.  Sorry to burst that bubble, but judaism comes from the mother - meaning if your mother is jewish, you are jewish.  If your mother isn't jewish, you can only be jewish if you go through the process of conversion. 
And no, jews aren't considered a minority even though they make up a very small percentage of the population.  And in terms of law, jews are far from under represented.

and how do you prove percentages? that would be interesting to research...by the way...if aye was blue...would that count as an urm...or is it just black?

you prove it my giving them your family tree. Rosa Parks was 1/8 black so if she was kicked off the bus, why cant a 1/8 or 1/16 black get the URM benefits? Hello, HYS Law full ride!

aye think aye don't understand the whole "percentage" {don't you mean fraction} of being "black" thing...is that jamaican? trini? senegalian? capoid?  please elaborate.
