So I can either work with the mediation department of the EEOC or with a solo practitioner that does workers compensation defense work.
What do you all think would be the best experience or what would look the best on a resume for trying to get a job with a big firm.

Getting experience that you can talk about is more important than the type of job you have. Personally, I think the EEOC work would be more interesting to talk about in an interview, but that's just me.

I think you can also probably more reliably get a positive experience. It is hard to know what the solo is going to have you do but the federal programs are usually pretty good.
