If you are going in for interviews right now, possibly for PI work or internships w/ Prosecutors office and an offer is made...What is the appropriate way to say "I like this offer but I want to see if something better/different/paying may come along"

Reiterate that you're excited to get an offer from them.  Ask for an extension on the deadline so that you may make an informed decision after meeting with other employers or attempt to secure funding through grants and fellowship programs. 

However, don't be too surprised if they hold you to the 2-week standard response period.
