The issue isn't about what the easiest exam is...easy exams just lead to smaller spread between grades, which makes them more subjective.
Since you are just competing against other students, they are all the same...everyone will do better on an easier test.
Some people have better experiences with certain parts/types of tests (essay, multiple choice, take home) or with certain professors, but that's pretty common in undergrad, too.
