What's the deal with withdrawing?

Can I just send an email? If I do, should I send it to the person who signed my acceptance letter or just the generally law admissions email address. Also, should there be much to this or should I just say that I'm withdrawing my application?

I've sent mine to the admissions office or to the person who has sent me e-mails from that school. A nice "I'd like to withdraw my application as I have decided to attend a different school. Thanks for your help," should suffice.

Seconded. They're not looking for anything huge, just a heads up that you won't be attending so they can give your spot to someone else. Email works great.
