1) Skimmed hundreds of pages of reading I should have done weeks ago
2) Reviewed sad excuse for class notes
3) Looked around in despair at sad state of apartment
4) Kicked myself for being such a slacker

I did not glean your conclusion about doc review from that wikipedia page.  But I think the general definition of "the practice of law" would allow a paralegal--supervised by a lawyer--to review documents.  It will depend on the state, so review of the case law and criminal statutes of a particular state would be most useful.  As an anecdote, I worked with a paralegal who reviewed documents for privilege (a legal issue, similar to reviewing for relevancy).  Presumably, this was not the practice of law in that state.

I guess I'm only even somewhat familiar with what people do in my state.
