it's probably not going to be a good recommendation because schools are generally looking for someone who can speak to your academic abilities (or to a lesser extent your work qualifications and capacity), so some guy who you have never taken classes from or worked for probably won't make for a good recommendation.
To answer your last question, 3 recommendations is a good amount. Probably 2 academic and 1 professional is a good balance if you can't get 3 academic. 46

I think in the corner of my essays, I had my name, LSAC number, and the type of essay it was (personal statement, diversity statement, question #23, depending on how the school's application worded what they wanted)
