Choosing the Right Law School / Top-5 Deferring

It seems like Harvard has a pretty liberal practice for deferring, but do any of you know how often Yale, NYU or Stanford allows admitted students to defer acceptance for a year? I really want to apply now but if I'll be forced to go I'm not sure what to do. Any advice would be awesome.

I have two choices for a topic and I'm not really sure which one I want to go with. I'm trying to be non-traditional but am struggling to pick one.
If you could just let me know which one you think is stronger I would be eternally grateful :).

1) Journalism—talking about my experiences with 3 entertaining stories illustrating certain characteristics, then tying journalism into my interest in law school (really different than usual hardship one, but they do want something “risky” right?)

2) Heritage—talking about traveling throughout E. Europe with my grandfather, a Holocaust survivor, and how it put my life and anti-Semitism I’ve confronted into perspective

I have a good lsat (178) and a pretty good GPA, but I really don't know if my personal statement completely missed the mark. I know I can write, it's just that this style is far more difficult than I imagined. Would anyone like to read over the draft I just did? It would be a huge help and I love the criticism!
