This is purely anecdotal, but the last lawyer I hired to represent me (in traffic court) was a Touro grad working in North Carolina.  He has his own practice there (and NC, as you may know, has plenty of lawyers from plenty of great NC law schools).  He also teaches and judges moot court at UNC Law. 

You've probably made a decision by this point, but I wanted to inject one bit of positivity into this somewhat disheartening thread.

I'm also from the south, but not the deep south (North Carolina).  Who knows if that affects my reaction, but I do NOT blame your fiance for being upset.  My future wife recently told me she'd be happy to take my name and I was honored and relieved.  I'm committing to her, I'm choosing a law school that is near where she wants to work, and I will support her however I can.  Her taking my name shows that she respects our union and is willing to make personal sacrifices for it (my last name is a bit more unwieldy than hers).

Also, in the back of every guy's mind:  "It's a bit easier for her to back out of this marriage if she hasn't even bothered to change her name."

Final note:  This response may appear bigoted, conservative, overly-general, even misogynistic.  I hope it isn't.  I'm just giving an honest perspective from a guy who can probably relate on some levels to your fiance.

Is this discussion actually happening?  Why don't you racist, short-sighted, under-performing white folks google your local klan chapter and join already?  Save this crap for their meetings. 

I'm white, by the way.  And I don't need to blame affirmative action for not getting into Yale.

UT and UK both gave me $$$ and I ended up choosing Tenn over UK.  It really comes down to where you want to work after you graduate.  I want to work in Nashville after graduation and a quick martindale search showed me how powerful UT was in the nashville market (just as UK grads tend to dominate a city such as Louisville).  Both are great schools.  The facilities at UT trump UK by a longshot, but UK is apparently building a new law school soon (but that surely doesn't mean it will be done before you finish).  Lex and Knox are both great places to live.  Both have comparable cost of living (I would say Lex seemed a little cleaner and better maintained than Knox).  Assuming you want to stay in the area after graduation, 70K in a place like Nashville or Louisville is comparable to over 150K in a city like NYC.

Hit me up with some specific questions and I'll try to help you out.

Hey - money from UT-Knox would be great.  Mind sharing whatcha got (roughly) and how you got it?
